1 tablespoon extra-virgin olive oil
1 (1½-pound / 680-g) skin-on salmon fillet
1 teaspoon salt
¼ teaspoon freshly ground black pepper
1 teaspoon dried dill
2 tablespoons melted butter
2 lemons, sliced, divided
- Preheat the oven to 400ºF (205ºC).
- In a Dutch oven over medium heat, heat the olive oil. Add the salmon, skinside
down, and let it sear for 5 to 10 minutes, so the skin gets crispy.
Remove the pot from the heat, and sprinkle the salmon with the salt, pepper,
and dill. Pour the melted butter evenly over the salmon. Place half of the
lemon slices on top of the salmon.
- Cover and bake in the oven for 15 to 20 minutes, until the salmon flakes
easily with a fork.
- Transfer the salmon to a serving dish. Throw away the cooked lemons and
replace them with the fresh sliced ones before serving. Season with salt, if
