Lemon Halibut with Tomato

Prep time: 10 minutes | Cook time: 30 minutes | Serves 4
4 tablespoons unsalted butter
Juice from 2 medium lemons
Several dashes Tabasco sauce
4 (8-ounce / 227-g) halibut steaks
Pinch salt
Pinch pepper
1 small onion, peeled and chopped
½ large red bell pepper, seeded and chopped
3 large tomatoes, peeled, seeded, and chopped

  1. Heat oven to 400ºF (205ºC).
  2. Place a Dutch oven over medium heat. Add butter, lemon juice, and Tabasco
    sauce. Stir until butter has melted. Turn off heat.
  3. Season fish on each side with salt and pepper. Sprinkle onion and bell
    pepper over the bottom of the Dutch oven. Add fish and scatter tomatoes
    over the top.
  4. Bake 20 to 25 minutes or until the thickest part of fish is opaque. Spoon the
    pan juices over fish every 10 minutes. Remove fish from pan and spoon
    sauce over it to serve.
