Ingredients:
1 large avocado, cut in half lengthwise
2 eggs
Salt and pepper, to taste
1 cup cheddar, shredded
1 teaspoon parsley
Directions:
Preheat the air fryer at 300F.
In a bowl, crack the eggs and mix with the pulp of avocado after de-seeding it.
Add salt, pepper, and shredded cheddar.
Pour the mixture into the empty avocado halves.
Cook in the air fryer for 5 minutes.
Sprinkle with chopped parsley and serve.
